What I Eat in a Day | #1

Following last week's introduction to my new fitness lifestyle, I thought I'd introduce you to my food. I've generally been really good with food over the past few years. I like eating clean and healthy so this is not really a new lifestyle choice. The hardest thing though is finding cheap recipes for 1, which is what this is.


PS. I use coconut milk because I have reduced my lactose intake as much as possible. I realised it was making me bloated and since cutting it out it has helped with my weight loss. Of course, you can use any milk you want.

Mix the oats and milk in a pot and warm over medium heat. Stir while it's cooking until you get the porridge outcome. Top with a bit of mixed nuts and/or seeds.


Toss a small salad together by mixing the salad leaves (Lettuce & baby spinach) and chop a tomato and add it in the mix.

Slice the 50g of reduced fat mozzarella. Also, slice half a small avocado, season with salt and pepper.

Toast 1 wholewheat pita bread and add it to the spread on the plate.


Boil 50g of buckwheat noodles.

Put some coconut oil into a WOK and add the sliced spring onion and diced chicken breast. When the chicken looks half cooked add 2 tablespoons of chickpeas and a handful of mangetout. Cook for 3 minutes and then add a bit of water from the buckwheat noodles.  Leave to simmer for 5 minutes.

Add the buckwheat noodles to the mix and leave cook until the water dries out.

Snacks. In between breakfast and lunch I had an apple and a green tea. In between lunch and dinner I had hummus and oat crackers.
