Healthy Sunday - Week # 17

Hey there!  I am going to start sharing my healthy tips on a Sunday...I decided.  I am on a diet and I am really watching what I am eating.  Now, when I have to cook for myself it has to be something quick because I need to get back to my million things ASAP.  But I know it is hard for quick and easy recipes to come to mind, so I will be sharing some of what I do.  Believe, they're REALLY simple.

This week it is the Chicken Couscous (P.S. I love couscous and chicken).

Serves 1
Approx. Calories 395Kcal
Level -  SUPER Easy

50g Couscous
50g Frozen Peas
70g Chicken breast pieces
1 Chopped Tomato
1 Teaspoon Olive oil
100ml boiling vegetable stock
1 Pita bread

1. Put 50g of dried couscous in a bowl and pour the boiling vegetable stock over it, just about covering the couscous. Then cover the bowl with a small plate and leave it there for 5 minutes.

2. Do the same thing with the 50g of peas in a separate bowl and pour what is left of the vegetable stock. Cover this with another plate. 

3. While the couscous and peas are enjoying their spa treatment, put the chicken pieces in microwave on microwave and grill for about 4 minutes (check them as you go along, they might need less or more).

4.  When everything is done, put all the ingredients (peas, couscous and chicken) in a bowl. Mix together and add a tablespoon of olive oil.  Then mix again. 

5. If you want, you can toast a pita bread to eat it along with your lovely chicken couscous. 

Five easy steps and it literally does not take more than 10 minutes to prepare.  No extraordinary cooking involved and perfect to prepare for a boxed lunch or a side while your food is cooking.
